Sweet 'n Sticky Sriracha Chix


Ingredients
  • 2 tbsp Sriracha 
  • 4 tbsp Garlic 
  • 1 tbsp Ground Ginger 
  • 2 tbsp Honey 
  • 1 tbsp Brown Sugar 
  • Salt & Pepper 
  • 1 tsp Seasame Oil 
  • 1 tsp Fish Sauce 
  • 1 tsp Red Chili Paste 
  • 1/4 cup Soy Sauce 
  • 3-4 boneless skinless chicken breasts (cut into inch strips)



Directions


1. Mix all the ingredients in a bowl. 


2. Cut chicken into inch thick strips & put some season salt and pepper on them.


3. Heat olive oil & butter in a skillet over medium heat. Add chicken and brown both sides about 2 minutes on each side.

4. Pour sauce over the chicken. Simmer uncovered until the sauce gets thick, 15-20 minutes on low-med heat.

- Serve over rice w/ remaining sauce

Mediterranean Chicken Thighs
















Ingredients
  • 2 Lemons (Juiced) 
  • 5 tbsp Olive Oil 
  • 6 cloves of garlic 
  • 1 tbsp Basil 
  • 2 tbsp Oregano 
  • 1 tbsp Red Wine Vinegar 
  • 1 tbsp Cumin 1 tbsp Honey 
  • 1 tbsp Salt 1 tbsp Pepper 
  • 5 boneless skinless chicken thighs 
  • 1 Onion 
  •  2 Peppers 
  • 2 tbsp Butter



Directions

1. Mix lemon, olive oil, garlic, basil, oregano, red wine vinegar, cumin, honey, salt, pepper & chicken in a bowl. Marinate for at least 2 hrs or overnight.

2. Slice the onion & pepper & cook on medium heat with garlic, butter, olive oil, salt & pepper for 10 minutes.

3. Preheat oven to 350 degrees

4. Grease the bottom of a glass baking dish and place the chicken in the dish. Pour over the onions & peppers and cook for 30-40 minutes.

- Serve w/ couscous, rice or potatoes

Local Natives /// Warning Sign














"Hear my voice, hear my voice,

These mustachioed left coasters perform a sweet rendition of the Talking Heads's track 'Warning Sign' off the first co-production by Brian Eno's 'More Songs About Building and Food'. Luckily the Local Natives put their signature psych-folk twist on the track and do play it straightforward, watch the video that was filmed back in 2009 at the Doug Fir in Portland.

Teriyaki Chicken



Ingredients
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 cup brown sugar
  • 1/2 cup lite soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 tablespoon garlic (minced)
  • 1/2 tablespoon ground ginger
  • 1 teaspoon pepper
  • 1 teaspoon cayenne
  • 8 boneless skinless chicken thighs

Directions

1. In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger, black pepper & cayenne or chilli powder. Let simmer, stirring frequently, until sauce thickens and bubbles.
2. Preheat oven to 375 degrees F.

3. Place chicken  in a lightly greased baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.

4. Bake in the preheated oven for 30 minutes. Turn oven down to 350 and turn pieces over, and bake for another 20 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

5.  Pour the juice from the pan into a bowl & make a gravy. Serve over rice.

Chili Rub



Ingredients
  • 1 tablespoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon cayenne 
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper














Carne Frita




Ingredients
  • 3-4 lb pork shoulder (cut into 1" chunks)
  • 1/4 cup of red wine vinegar 
  • 1/3 cup of olive oil
  • 1 tablespoon of Goya Adobo
  • 6 cloves of garlic (mashed)
  • 1 tablespoon of oregano
  • 1 tablespoon of salt
  • 1 tablespoon of pepper
  • 1 teaspoon of cayenne
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika 
  • 1 jug of vegetable oil

Directions

1. Rinse meat, add vinegar, garlic, adobo, oregano and olive oil. Let marinate for 2 hours or overnight.

2. Deep Fry at 350 degrees in medium sized batches till finished (10-12 minutes). Drain and serve w/ rice & beans.

Japanese Pork


Ingredients
  • 2 Pork tenderloin (1lb. each)
  • 8 cloves garlic, peeled and minced
  • 5 tablespoons Japanese soy sauce
  • 1 tablespoon water
  • 1 teaspoon sugar
  • 2 tablespoons sesame oil
  • 3-4 scallions, chopped
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon crushed sesame seeds
  • 1 tablespoon of honey (optional)
  • 1 teaspoon of red chili paste (optional)
  • 1 teaspoon of ginger (optional)
  • 1 teaspoon of Sriracha (optional)

Directions

1. Combine the marinade ingredients in a small bowl, stirring to blend them well. Pour over the meat, and coat well. Refridgerate for 2 hrs or overnight.
2. Bring pork back to room temp. Pre-heat oven to 350F & cover with foil. Cook for 45 minutes in marinade. Transfer pork to a cutting board, let rest for 10 minutes. Cut into 1-inch slices and serve.

Simply Red Salsa


Ingredients
  • 2 (14 1/2 oz) cans diced tomatoes (w/ juice)
  • 1 onion
  • 8 cloves garlic
  • 2 jalapeño peppers (deseeded)
  • 3 limes
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp granulated garlic
  • 1 tsp of completo
  • 1 tsp of oregano
  • 1/2 cup of cilantro

Directions

1. Strain tomatoes and reserve juice. Roughly chop onion, fresh garlic, and jalapeño; add to food processor fitted with a metal blade. Add juice from tomatoes, lime juice, salt, pepper, and granulated garlic. Process on high for about 30 seconds.
2. Add about 1/2 cup of diced tomatoes and process on low for an extra 5 seconds. Add remaining tomatoes and cilantro and pulse until desired consistency is reached. It’s ready to serve immediately, but you can also let it chill in the refrigerator overnight to let the flavors combine.

Steak Tacos

Ingredients

  • 2 lb. Skirt Steak
  • 2 tablespoons chopped garlic
  • 1 jalapeño chile pepper, seeded and minced
  • 1 teaspoon cumin
  • 1 large handful fresh cilantro
  • Kosher salt
  • Black Pepper
  • 2 limes, juiced
  • 2 tablespoons white vinegar
  • 1/2 teaspoon sugar
  • 1/2 cup olive oil


Directions

1. Lay the flank steak in a large bowl. Combine marinade ingredients and pour the marinade over the steak. Make sure each piece is well coated. Cover in plastic wrap and refrigerate for 1-4 hours.
2. Fire up the grill & season both sides of the steak pieces with salt and pepper. Grill the pieces for a few minutes only, on each side, depending on how thin they are, until medium rare to well done, to your preference. You may need to work in batches. Remove the steak pieces to a cutting board and let rest for 5 minutes. Thinly slice the steak across the grain on a diagonal.

Beaver Boys Scampi


Ingredients
  • 1/4 cup olive oil
  • 1 lb peeled and deveined large shrimp
  • 4 large garlic cloves, left unpeeled and forced through a garlic press
  • 1/2 teaspoon of cayenne
  • 1/2 cup dry white wine
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 5 tablespoons unsalted butter
  • 3/4 lb capellini (angel-hair pasta)
  • 1/2 cup chopped fresh flat-leaf parsley

Directions

1. Bring a 6- to 8-quart pot of salted water to a boil.
2. Meanwhile, heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté shrimp, turning over once, until just cooked through, about 2 minutes, and transfer with a slotted spoon to a large bowl. Add garlic to oil remaining in skillet along with red pepper flakes, wine, salt, and pepper and cook over high heat, stirring occasionally, 1 minute. Add butter to skillet, stirring until melted, and stir in shrimp. Remove skillet from heat.
3. Cook pasta in boiling water until just tender, about 3 minutes. Reserve 1 cup pasta-cooking water, then drain pasta in a colander. Toss pasta well with shrimp mixture and parsley in large bowl, adding some of reserved cooking water if necessary to keep moist.

Sweet Chili Ribs



Ingredients
  • 4 beef rib eye steaks cut 1” thick 
  • 4-5 lbs of spare ribs
  • Salt
  • Pepper
  • 1/2 cup of Thai Sweet Chili Sauce (Mae Ploy)



Directions

1. Preheat oven to 275F.  On the underside of the rib, remove the thin membrane and discard & Season both sides with salt and pepper.

2. Place the ribs in a roasting pan, cover with double thickness of tin foil. 


3. Roast for 4 hours or so. Discard foil. Use a wide, flat spatula to carefully lift the ribs onto a baking sheet. Spread the sweet chili sauce generously over the ribs. 


4. Place oven rack near the top of the oven. Turn broiler on and broil the ribs for 3-5 minutes, or until the sweet chili sauce begins to caramelize. Make sure you don’t burn the sauce, so keep a close eye on the ribs.

Gorillaz - Empire Ants (Live)
















A few years ago we went to Coachella a music festival in Palm Springs, CA. Gorillaz was headlining on the final night after a very energetic Atoms for Peace set...this song stuck out in my head as we are huge Little Dragon fans. To see Yukimi come out and just hold 60,000 people in the palm of her hand after seeing her a month before this play to a crowd of 100 was something I'll never forget. Check out this live performance of 'Empire Ants' from a 201 Letterman apperance.
