1. Mix lemon, olive oil, garlic, basil, oregano, red wine vinegar, cumin, honey, salt, pepper & chicken in a bowl. Marinate for at least 2 hrs or overnight.2. Slice the onion & pepper & cook on medium heat with garlic, butter, olive oil, salt & pepper for 10 minutes.
3. Preheat oven to 350 degrees
4. Grease the bottom of a glass baking dish and place the chicken in the dish. Pour over the onions & peppers and cook for 30-40 minutes.
- Serve w/ couscous, rice or potatoes
